This recipe is originally from Anthony Bourdains cookbook “appetites” and its a stunning knockout of a comfort food for me. When I make this I go very all out, making the bread rolls and making my own pickles, it feels very ritualistic to spend an entire day prepping my ingredients then being able to spend a whole week having these for breakfasts and lunches. Like for a lot of people, Anthony Bourdain and his mentality for cooking brings me comfort and this recipe makes me feel close to that. Its also just a beautiful sloppy sandwich that will make you see god.
ingredients
Bread roll (my favourite recipe for bread rolls if you want to be crazy)
2 pieces of mortadella 4 if you want it extra meaty and crazy
2 slices of provolone cheese
Mayonaise (kewpie is best)
Dijon Mustard
Optional
Some pickles (my recipe for pickles)
Instructions
Start by toasting your bread rolls on your pan of choice, get them nice and golden brown before taking them off.
In the same pan start to fry your mortadella. Let your mortadella get nice and crispy on both sides then put your slices of your provolone on top of your mortadella and let that melllllt. (If you’re using 4 slices of mortadella make bunches in pairs and put your 2 provolone slices on those)
While that’s melting spread Mayonaise and lots of mustard on your bread. I really do recommend adding some pickles here too it really breaks up the flavours with the acidity and adds a nice crunch./li>
Slap your mortadella provolone bundles on your bread and youre done! This recipe is super easy and gorgeous. Have a little salad, some crisps and a crisp little soda on the side and you have the best meal you’ll ever have
